What oxalate is

Oxalate, or oxalic acid, is a naturally occurring compound in many plants.

It binds minerals such as calcium and iron in the gut, which lowers how much of them your body absorbs from that meal.[1]

Your body also produces some oxalate on its own.

Diet typically contributes a substantial share of the oxalate that ends up in urine, which is why intake matters for people prone to stones.[2]

Foods high in oxalate

Oxalate is concentrated in a fairly short list of foods.

Oxalate and kidney stones

Calcium-oxalate is the most common kidney-stone type.

For people who form these stones, guidance generally focuses on adequate fluid, normal (not low) calcium intake, and moderating the few very-high-oxalate foods rather than cutting plants broadly.[2]

Eating calcium alongside oxalate-rich foods lets the two bind in the gut instead of the urinary tract, which lowers oxalate absorption.[1]

Cooking lowers it

Soluble oxalate leaches into cooking water.

Boiling can cut soluble oxalate by roughly a third to nearly nine-tenths depending on the vegetable, while steaming removes less.[4] Discard the cooking water either way.

Bottom line

If you form calcium-oxalate stones, moderate the short list of very-high-oxalate foods, keep calcium normal, and boil where practical.
